Digital Classes now available!

Digital Classes are delivered to you via email at 2 pm PST the day of class with  prerecorded videos, the class recipe packet and a link to a live streaming drop in chat with the instructor during their ‘office hours’,  4:30-6:30 pm PST on the day of class.  We are also available 7 days a week to answer your questions via email and phone! This format allows you to view, pause and replay any portion of class and learn at your own pace!

Two pricing levels:

$25 all class material and support with NO meal kit included (ingredients for class in description section of registration page) Sales of registrations with NO meal kit are open until 1:30 pm PST on the day of class.

$45 all class material and support WITH a meal kit with all class ingredients ready for pick up at our location the ‘day of class’ from 2-6pm   Sales of registrations WITH meal kits close 72 hours prior to the start of class for ordering purposes.

DIGITAL COOKING CLASS: Ramen From Scratch!

Our NEW series of Digital classes now allow you to keep learning with us from the comfort of your own home at your own pace! Classes are pre-recorded, so no need to worry about delay or missing out on vital information. Registrations for MEAL KIT classes close 72 hours prior to class for ordering purposes. NO KIT registrations open until 1:30pm PST on day of class. Ramen!! Toss the 'Top Ramen' and learn to make the super flavorful pork stock, turning it into Ramen Broth, favorite fixings like roasted pork shoulder, pork belly, fish cakes etc to of course the noodles from scratch. No cutting corners, no rushed additives...the REAL DEAL!    You will receive an email on the 'day of class' with the video(s) and recipe packet with ingredient list and equipment we suggest for whether you have purchased a meal kit for pick-up at the shop on the day of class from 2-6pm or decide to shop on your own. Please note, substitutions or allergy requests are not included in the meal kit option (please make appropriate subs at home) Thank you for understanding! Ingredients needed if NO kit option is purchased: Stock 6-8 servings : 2 pounds pork bones (knuckle bones and a pigs foot works well), 2 carrots, 2 stalks of celery, 1 large onion Broth 2 servings: 4 handful sized kombu (dried seaweed), 1/4 cup bonito flakes, 2 inches fresh ginger, 3-4 cloves garlic, 4 dried shittake mushroom Garnishes and Fixings 2 servings: 1/4 pound pork belly, 1/4 pound pork shoulder, 2-4 fish cakes and or fish balls, 2 stalks green onion, 1 small canned bamboo shoots, 2 eggs, 3 inch piece diakon radish, (optional: 1/4 cup canned corn, 1 piece nori, Togorashi seasoning, hot chili oil) Noodles 2 servings: 2 cups all purpose flour, 1 cup water, 1 Tbsp baking soda, 2 tsp salt Equipment suggestions: Stock: Large stock pot (the biggest pot you have), mesh strainer, large bowl to strain out the bones/veg, containers to freeze extra stock (we like zip-lock bags) Ramen broth: medium sized sauce pot, spatula or large spoon, slotted spoon or strainer, if you have a pasta machine, great!  No worries if not, we will also show you how to roll out and cut the noodle dough without the machine! Rolling pin in place of pasta machine.

This is one of our most popular classes, so we're pretty excited to be able to bring the techniques of Xiao Long Bao, Pork Siu Mai, and Japanese Gyoza to the comfort of your own home!   You will receive an email on the 'day of class' with the video(s) and recipe packet with ingredient list and equipment we suggest for whether you have purchased a meal kit for pick-up at the shop on the day of class from 2-6pm or decide to shop on your own. Ingredients needed if NO kit option is purchased: Wrappers and xlb dough: 20 round gyoza sheets, 20 round THIN Siu Mai sheets, 2 cups bread flour, 1 cup water 2 pinches salt XLB filling:  ½ pound ground pork ½ cup gelatinized pork stock ½ bunch green onions, minced 2 dried shiitake, rehydrated and minced 2 water chestnuts, minced 2-3 cloves garlic, minced 1 Tbs. soy sauce 1 Ttsp. fish sauce 1 tsp. salt  1 tsp. ground black pepper Siu Mai filling: 1/2 pound ground pork 3-4 peeled deveined shrimp, minced 1 dried shiitake mushrooms, rehydrated and minced  3-4 water chestnuts, minced  1 stalks green onions, minced 2-3 cloves garlic, minced ½ tsp. sugar 1 tsp. cornstarch 1 Tbps. soy sauce 2 tsp. rice wine ½ tsp. sesame oil 1 beaten egg pinch each, salt and pepper Japanese Gyoza filling: 1/4 yellow or red onion, minced 2-3 fresh shiitake mushrooms, minced (dried, dehydrated in hot water also works well) 1 inch fresh ginger, minced 3-4 cloves garlic, minced 1 stalk green onion, finely sliced 1 cup napa cabbage, thinly sliced 3-4 water chestnuts, chopped ¼ bunch fresh cilantro, chopped ½ bunch of Shiso (optional as it’s not always available in the asian markets) 1 tsp. sesame oil  Salt and pepper to taste  1Tbsp. oil to sauté the veggie mixture in. Oil for frying

Macarons!  You love them, we love them and now you can learn to make them whenever your little heart desires.  There are a lot of techniques, tips and tricks we will show you in this class and you might even have enough to share with your loved ones...after you 'taste and taste and taste your creations.  You know, quality control! You will receive an email on the 'day of class' with the video(s) and recipe packet with ingredient list and equipment we suggest for whether you have purchased a meal kit for pick-up at the shop on the day of class from 2-6pm or decide to shop on your own. Ingredients needed if NO kit option is purchased: 165 g Almond flour 165 g Powdered sugar ¼ t Salt 5 g Powdered egg white 150 g Granulated sugar 115 g Eggs whites (older is better) 3g Cream of tartar Food coloring optional Ganache: 1 part dark or milk chocolate, 1 part hot cream (whether it's a cup or a gallon, one for one...you decide) You might start with a cup.  🙂 Swiss Butter Cream:  16 oz sugar 8   oz pasteurized egg whites Pinch salt 24 oz butter room temp Optional: jams, jellies, nut butters, nutella....etc. Recommended Equipment: Stand mixer with whip, No stand mixer? No worries! You can alternatively use a hand mixer and a bowl or a bowl and whisk. If you whipping by hand, it's doable, but it will take time, Food Processor or Blender, strainer/sifter, Large mixing bowl, spatula, 2 pieces parchment paper (you could use a silpat, but we STRONGLY recommend parchment), 1-2 sheet trays, piping bag or large ziplock, large (806/1/2 inch)round piping tip, or the white adaptor tip that comes with the small Wilton piping set. A snipped corner/end of the bag will also work, but the cookies may not be perfectly round.
